Microbiological and chemical evaluation of chicken stock with special reference to the monosodium glutamate

Abstract: Chicken stock cube samples were randomly collected from supermarkets for evaluation their microbial and chemical quality . Samples represent two different commercial for trade brand (A,B) The mean values of APC, B. cereus, coliforms and Staph. aureus for stock samples brand (A) and brand (B) were 2x10 . The results were discussed and recommendations to improving the quality of the chicken stock were given .
