Objectives

1-Using new technologies to improve the quality factors of fruits and vegetables products produced for either local consumption or for export. Besides the the utilization of natural antioxidants and colorants especialy for baly foods is of special importance.
2-To make use of the availability of solar energy in egypt to produce dried products of food quality such as powder of tomatoes ,onions ,garlic as well as dried fruits as raisins,opricot sheets ,plums and others espesially for small project at rural districts ,as there are an increasing yield and surplus.
3- Trying to improve qualities of fruit and vegetables juices and concentrates, with special reference to packaging materials and storage practices.
4-Trying to solve the technological problems confrronting fruits and vegetables factories ,especially from the view point of safety,quality and the suitability of raw materials to processing.
5-To make use of fruit and vegetable wastes remaining after processing in order to produce some demanded meterials imported from abroad such as pectin, natural food colorants as well as seme flavoring materials ,This would asssist to partically overcome .The problem of pollution,and would be of economic emportance.
6-To encourage the production of mushroom varieties which would be afood necessary for human health and for medicinal uses .Besides,training courses are usually and periodically held for mushroom production and fruits and vegetables processing.
7-Ttying research on the new introduced vegetable varieties to define their suitability for processing ,in addition to the safety of packaging materials as well as the most suitable methods of preservation and extending shelf life of processed fruit and vegetable product.
8-Improvement of the methoddogy of preserving the medical and aromatic plants in order to maintain their function groups.
9- production of new untraditional products having high nutritional values and demaded for human health especially those suffering from high cholesteral level
