Production and evaluation of untraditional lime sheets product

Lime fruits (Citrus avrntifolia) are considered to be of top quality due to their high acid content, good source of vitamin C, mineral elements and aroma components. Also the fruits have a wide variety of application including drinks, pharmaceuticus purposes and are usually consumed with meals as a condiment acidulant, flavoring agent. Therefore, the aim of this study is to introduce lime sheets which could be industrially processed and consumed all ever the year round, as the production of this crop is high and the price suffers considerable fluctuation during the year. In this study, the sheet was prepared within five treatments with studying the effect of different additives i.e. pectinex enzyme, stargel, sucrose, glucose and sodium metabisulfite to homogenized puree. The aim was also extended to investigate the effect of dehydration process and storage at ambient temperature (25±5°C) as chemical composition (i.e. ascorbic acid, carotenoides, acidity, pH value, Free-amino nitrogen, total soluble solids and moisture content.) and sensory evaluation on the quality of final product. The obtained results revealed that it is possible and successful to produce lime sheets with good quality from puree whole lime fruits treated with 0.5% sodium metabisulfire, 300 p.p.m. pectinex enzyme and sucrose to 18% total soluble solids, then dehydrated in an electric oven at 60°C and stored at ambient temperature.
