Evaluation of some street- vended foods in Egypt

Abstract: Forty samples from the most popular street-vended foods in Egypt included Medames , Taamia (from bean dishes), Koshari (rice and macaroni dish) ,sausage and fried liver were collected from street vendors to assess the nutritional content and determine the extent of microbiological and heavy metals contamination.
The obtained results revealed that except for fried liver, the other types of foods need fortification with minerals and vitamins however these foods are usually serve with bread and salad. Fried liver was the highest in the nutrient content while Koshari was the lowest one compared to the other foods.
Concerning to the pollution by heavy metals, lead and cadmium were analyzed; the results declared that the street-vended foods from plant original were raised in lead, content the average while animal-based foods were the highest in cadmium. The average content varied from 31.503 mg/kg in Medames to1.554 mg/kg in sausage for lead and from 0.021 mg/kg in fried liver to0.007 mg/kg in Medames for cadmium. Microbial analyses results illustrated that the street- vended foods samples were heavily contaminated by yeast and molds, B. cereus, E. coli, fried liver and sausage were the most contaminated while Medames and Taamia were the lowest in count. It was concluded that the street-vended foods analyzed in this study were unsafe for consumption. Vendors must be receive training in food hygiene and enhance the production conditions.
