Technological and Biological Studies on the Fruit of Doum (Hyphaene thebaica) and Calyces of Roselle (Hibiscus sabdariffa)

Abstract: The present study was designed to produce and evaluate some products (drinks and jellies) from the doum (Hyphaene thebaica) fruit (DF), calyces of roselle (Hibiscus sabdariffa) (CR) and their mixture (DF+CR) and investigate the biological effects on rats made hypercholesterolemic by continuous cholesterol feeding. Results showed that frozen drink prepared from DF+CR had the highest score of organoleptic evaluation. Also, the highest body weight gain was 60.08% for rats fed on diet containing DF (P<0.001) followed by those fed on diet containing CR (P<0.01) compared to cholesterol induced hyperlipidemic control group. Administration of experimental diet containing 10%DF, 10%CR or 10%DF+CR -by equal amount- with continuous cholesterol feeding for four weeks showed a significant decrease in the serum total cholesterol, low density lipoprotein and triglycerides values along with a significant increase in serum High Density lipoprotein levels and HDL-c/total cholesterol risk ratios compared to cholesterol induced hyperlipidemic control group. This study concluded that (DF) and (CR) had a possible hypocholesterolemic agent of natural origin and cardio protective effects. This protective effect appears due to DF and CR containing polyphenols and flavanols possess significant antioxidant and antihyperlipidemic activities antioxidant properties
