Improving Nutritive and Health Role of Parsley

Abstract: From nutritional viewpoint, some plants can be a significant source of micronutrients and antioxidants (AO). Pasley curly (Petroselinum crispum). (P), for instance, is of remarkable level of nutritive value as a green leafy plants. To study its biological effect, alone or within a protein matrix, 24 aged rats in 4 groups, among those two p treatments, were conducted. The combination of p + soy protein (S) , i.e., SP treatment, has protected both spleen and thymus in spit of the powerful effect of P alone as a body weight food controller against high fat diet. Moreover, SP , which contains more provitamin A + polyphenols and most probably better nutrtargetting potential, had promote the highest level of the immunoglobulin. This data support the idea that incorporating particular food items is more useful for immune system. The remarkable sign has been noticed in relatively greater secretion of both lgG and lgM with larger thymus gland and a bigger spleen concurrent with relatively smaller liver and kidney to the control. This body configuration associates lower blood lipids must be due to dietary the AO system contained larger various sources of plant fat, vitamins, minerals and polyphenol. In light of the present data, parsley medical significances were improved as SP. Several nutrients are needed to sustain proper immunity, but the action of lesser-known and unknown antioxidant compounds, such as that in P and S cocktail, with which an optimal metabolism is reached, might need further investigations.
