Biochemical studies on ginger in Egypt and Nigeria

Abstract: The present work was carried out to evaluate ginger rhizome (Zingiber officinale) family : Zingerberaceae extracts and its essential oil. This work included the proximate analysis of ginger rhizome, physicochemical properties of ginger essential oil, chemical analysis of essential oil by GC-Mass, the effect of ginger extracts and its essential oil on mitocondria lipid peroxidation and free radical scavenging, study antimicrobial effect of ginger extracts and its essential oil. Also, to study the anti-inflammatory activity of essential oil of ginger and its extracts in acute and chronic inflammation.
The results could be summarized as follows :
1- The proximate analysis of ginger rhizome was found to be moisture 10.1%, protein 7.6%, lipid 11.1%, fiber 7.5%, ash 7.6%, total carbohydrate 66.2% and essential oil 1.2%.
2- The physicochemical properties of essential oil was determined. The specific gravity 0.880, refractive index 1.4899, optical rotation -30, acid value 1.3 and peroxide value zero.
3- Gas chromatography-mass spectrometry (GC/MS) for analysis of ginger essential oil results showed that, the number of identified components of ginger was 33 compounds, representing 97.4% of the structure of ginger essential oil. The number of unidentified constituents of ginger essential oil was 10 compounds corresponding 2.6% of the structure of ginger essential oil. The major constituents of this essential oil were zinginerene 27.84% and beta farnesene 19.4%.
4- The results indicated that ginger extracts and its essential oil had potent inhibition of rat liver mitochondria lipid peroxidation.
5- The results illustrated that essential oil of ginger and its extracts had strong free radical scavenging effect as well as synthetic BHT.
6- The antimicrobial effect of ginger extracts and its essential oil at concentrations 25, 50, 100, 200 mg/ml were determined against two bacterial groups , one mold strain and one yeast strain. The inhibitory effect of ginger essential oil and its extracts increased with increasing their concentrations.
7- Biological part :
Evaluation of anti-inflammatory activity of ginger extracts and its essential oil. The results of the acute and chronic inflammation showed that ginger extracts and its essential oil produced significant anti inflammatory effect
