Chemical and Microbiological Characteristics of Some Rural Fermented Dairy Products in New Valley

Abstract: This study was conducted on three rural fermented dairy products included Laban Rayeb, Yoghurt and Kareish cheese which manufactured in house holders in El Dakhla, Balat and El Kharga, in New Valley Governorate to study the chemical composition and the microbiological characteristics of these products.
