PHYSICO – CHEMICAL STUDIES ON LEAF PROTEIN CONCENTRATES AND ISOLATES OF SOME VEGETABLE LEAVES

Abstract: Leaf protein concentrates (LPCs) were prepared using HCL 1.ON ,wherasleaf protein isolates (LPIs)were extracted by using heat precipitation, sodium hydroxide or sodium hexametaphosphate. The percentage of protein in LPC was 36.04 and 34.38%, while in LPI iy was 78.13% and 82.94% for potato and cabbage leaves,respectively. The amino acids content of LPI was determined in both potato and cabbage to find out the ratios of some amino acids, which affect the cholesterol level in blood. Whereas, the methionine : Glycine and Arginine :Lysine ratios are important for their hypocholesterolemic effect. The former was lower(0.38 and 0.19),while the latter was higher (1.30 and 2.49) compared with casein (1.57 and 0.46) in potato and cabbage leaves protein, respectively . Also phenoliccomounds and tannins were 11.03, 6.50;9.85, 4.58;4.50, 1.39; and 5.57 and 2.92(mg/g) in potato leaves,LPC, LPI AND fibrous residues, respectively. The corresponding values in cabbage were 9.54, 5.56; 6.97, 3.36; 3.88, 0.83; and 7.56 and 3.18 (mg/g), respectively . Crude fibers was fractionated to hemicelluloses, cellulose and lignin, alsototal pigments (chlorophyII A and Band carotenoids) were determined . the functional properties of LPC and LPI were studied.
