Effect of addition maize hybrids flour treated with manure and nitrogen fertilizer on balady bread properties.

Abstract: In this study three maiza hybrids were used,two were white single crosses(Sc10 and Sc 122)and the third was yellow single cross(sc155).the hybrids were cultivated at ismailia research station as new reclaimed area and fertilized with three rates of inorganic nitrogen,45.90 and 135kg N/Fed. and two rates of organic manure,0and20m/fed.
the fertilizers were added separately and in combination.the data revealed that grain yield and 100 kernels weight were significantly increased as nitrogen level increased up to 135kg/fed.application of 20m manur/fed. significantly increased grain yied. on other hand manure fertilizer did not significantly effect on 100kernels weight.grain yield of tested maiza hybrids differed significantly,of which sc10 recorded high value of grain yield while sc155 recorded high value of 100 kernels weight.
Chemical composition of the produced seeds were determined.the data revealed that protein content and ash increased due to types of fertilizer and vice versa concerning carbohydrate content.meanwhile,oil and fiber showed to be constant under treatment.corn meal was blended with wheat flour(82% extraction rate)at two levels 10%and 20%.
Chemical composition of the blends were determined.falling number slightly increased by increasing inorganic Nfertilizer,whileorganic manure showed no effect on its.blending of corn meal produced under different feritizing treatment with wheat flour produced loaves significantly differed in these organoleptic characteristics.
