supplementation of toast bread by elderberry for diabetic.

Abstract: the tree of elderberry (sambucus nigra) isculivated in mattarya district, Cairo,Egypt. leaves and flowers have antioxidant potential, so flowers of (sambucus nigra) were used to produce elder flower cordial. dry black elderberry was milled and the powder was used in toast bread (1% and 1.5%) for each (the plant and the extract, respectively). chemical composition, physical characteristics and sensory evaluation were made. supplemented bread was given to normal and diabetic subjects. chemical analysis showed that elderberry had 56.2% carbohyate, 2504% protein, 9.1% fat and 17.23% fiber. height of the toast was (4.7 and 4.6 cm) in 1% powder and extract, respectively and (4.68 and 4.65cm)in 1.5% powder and extract, respectively. color determination showed that lightness was in 1% powder and extract (28.86 and 32.79), respectively. besides (32.24 and 28.70) in 1.5% powder and extract respectively. acceptability were 7.63 and 7.50) in 1% of powder and extract, and using powder was better in this regard.
