Evaluation of physical and organolyptic properties of some herb beverage commonly consumed blend with milk permeate

Abstract: The current work deals the preparation and physical organolyptic properties of herbs beverage milk permeate mixed with Tamarind, Karkadeh and Carob. The obtained results showed that pH values of different treatments during cold storage period were decreased during storage for beverages based on karkadeh, tamarind, and carob/permeate blends after 10 days of cold storage. The changes in total solids (T. S) of beverages during cold storage were difference between treatments, also beverages based on carob/ permeate had the highest T.S content followed by beverage bas~d on tamarind/permeate, while, beverage based on karkadeh/permeate had the lowest T. S content. Data revealed that acetaldehyde contents were affected by different treatment of beverages, also beverage based on karkadeh/permeate blend had a highest contents of acetaldehyde followed by beverage based on carob/permeate then beverage based on tamarind/permeate. The obtained data revealed that the highest units of red colour bound in beverage based on karkadeh / permeate blend followed by the beverage based on tamarind/permeate blend, while, the lowest units of red calour was bound in beverage based on carob/permeate blend. On the other hand, the highest units of yellow colour was bound in beverages based on tamarind/permeate and beverage based on carob/permeate had lowest units of red while, yellow colour. The organolyptic properties of different treatments of beverages during cold storage period had good scores under the cold storage period
