The use of milk permeate in the production of extracellular bioemulsifier from Streptococcus thermophilus strains

Abstract: Four bacteria strains of Streptococcus thermophilus were cultivated on mille permeate, supplemented with yeast extract, peptone and lactose and on M17 broth to select the best strain which gives the highest bioemulsifiers yield. The best strain was Streptococcus thermophilus P which gave the highest growth in milk
permeate at 37.C for 24 h at pH 7. " "
The obtained bioemulsifier was able to stabilize butteroil-in-water emulsions over a broad range of conditions; namely pH 2 to 11, up to 5% sodium chloride and up to 15% sucrose in the aqueous phase. Also in the presence of low concentrations of various solutes. emulsions were stable to three cycles of freezing and thawing. Also the bioemulsifier maintained high emulsion activity after heat treatment up to 85°C /l0 min.
