Preparation of new artisan ice milk stabilizer stabilizer / emulsifier from rice straw

Abstract: The objective of the present work is to produce a new beneficial material from rice straw to overcome an environmental problem happened by burring this waste. Carboxymethyl cellulose (CMC) was prepared by two chemical methods (CMC1 and CMC2).Some of their properties-such as degree of substitution, solubility, COOH content and IR spectrometry were carried out. The prepared CMCs were used as new artisan stabilizer/emulsifier in manufacturing of ice milk mixes, each of them was added with different concentrations ranging from 0.5 to 0.7%(w/w) The ice milk mixes were analyzed for some physiochemical properties (TS%, pH, specific gravity, weight per gallon and viscosity). The obtained results showed a good stabilizing /emulsifying effect of the prepared CMCs on the ice milk mixes compared to control. The resultant ice milks were analyzed and evaluated organolepticlly. It could be concluded that, the prepared CMCs from rice straw can be used as a stabilizing as well as emulsifying materials in manufacturing of some dairy products.
