Production of satiety frozen milk

Abstract: The present study was carried out to produce satiety frozen milk using carobxymethyl cellulose as soluble non digestible oligosaccharide, satiety agent and stabilizer for the frozen milk products. Carobxymethyl cellulose which used in this work was prepared from rice straw (CMC1, CMC2) and compared with the commercial substrate (CMC3). In a preliminary work; the satiety frozen milk was prepared using different CMC concentrations (from 0.3 to 0.9% w/w) and the favorable sensory evaluated products were found with 0.6-0.8% CMCs concentration. Thus the mixes were prepared using 0.6, 0.7 and 0.8% CMCs respectively. The mixes were analyzed for pH, specific gravity, weight per gallon values as well as viscosity. The final products were analyzed for specit1c gravity, weight per gallon, melting resistance and evaluated for organoleptic properties. The most acceptable products were found that prepared using 0.7% CMC, thus it could be recommended the use of CMC as stabilizing agent in the production of satiety milk products as new nutraceutical products.
