Effect of fortification with dietary fibers of some legumes on some characteristics of plain yogurt

Abstract: Dietary fibers derived from two types of legume seeds (chickpea and sweet lupin) were evaluated for their effects on some characteristics of plain yogurt. The two fibers were added individually at the levels of 0.5, 1.0 and 1.5% (w/v) to yogurt milk prior to fermentation. Control was made from whole cow's milk without adding dietary fibers. Instead, skim milk powder was added to get approximately 14% total solids. Chemical, physical and sensory properties of the resultant yogurt were evaluated. The chemical parameters of yogurt were significantly affected by the incorporation of both fibers. Total volatile fatty acids, acetaldehyde and pH values were significantly higher and titratable acidity was lower in the fiber-fortified products than those of control. Addition of fibers decreased the water release of the yogurt significantly. As the level of fibers increased, the syneresis decreased. Yogurt manufactured with chickpea fiber exhibited the least syneresis. Curd tension varied between samples but appeared to be affected by the level of fiber fortification.
Yogurt manufactured with chickpea fiber was low firm. Flavor, texture and overall acceptability scores of yogurt samples fortified with chickpea fiber were significantly higher than those fortified with sweet lupin fiber, which were not significantly different from the control. The two fiber sources affected various attributes of the plain yogurt differently. These results indicated that dietary fibers from the two types of legumes can be utilized as function ingredients in plain yogurt.
