Some bacteriological quality of buffalo minced meat in Giza governorate

Abstract: A total of one hundred samples of buffalo minced meat were collected from butcher’s shops in Giza governorate and subjected for bacteriological examination . The mean value of Aerobic plate count, staphylococcus aureus count , Coliforms (MPN), Mould count and Yeast count were 6.2x105 ± 105, 1.3x103± 1.1x103 ,1.4x103 ± 7.2x103, 4.2x103 ±.9.3x102 and 8.4x103 ±1.9x103 respectively . E. coli and S. aureus could be isolated from 20% of the examined samples. The public heath importance of the isolated microorganisms were discussed. The sources of contamination of buffalo minced meat and measures which should applied to minimize the bacterial load and safe guard the consumer are mentioned.
