Determination of some hormonal , antibiotic and heavy metals residues in poultry meat of different species

Abstract: A total of twenty brown ( Lohmans )and white ( Arbor ekirs ) broiler chickens ( ten birds each ) were randomly collected from different markets at Cairo and Giza governorates . Moreover , a total of ten Balady chickens were collected randomly from the farmer house at Sharkia governorate . the chickens were slaughtered eviscerated and samples of the breast , thigh muscles and the liver were taken for detection of hormones ( estradiol – 17 B and testosterone ) , antibiotic and heavy metals ( lead and cadmium ) residues as well as the lipogram picture . the obtained results indicated that no positive samples could be detected for estradiol – 17 B or testosterone hormones , where all the examined samples were within the permissible limits for chickens meat according to the Egyptian Organization for Standardization and Quality Control ( EOS) . meanwhile , there was a significant increase in the values of tissue total lipids , cholesterol and triglycerides in white breed when compared with the brown and Balady breeds . furthermore , a high concentrations of oxytetracycline , lead and and cadmium residues were detected in white breed in comparing with the brown and balady chicken specially in the liver tissues . the public health significance of such residues as well as recommended measures to avoid contamination of poultry tissues was discussed
